Apples in the Kimchee!

This morning, I ventured to the market with a slightly different mission than usual. As a self-appointed fruit detective, I was spying for the inventive ways that farmers and vendors are using fruit in their products this time of year.
It all started a few weeks back when I discovered apples in the kimchee (second from right). This, I thought, was lovely. I figured if I were to look a little harder I’d find many other ways that fruit can be creatively used in our winter diets.
The results were astonishing: apple tarts, apple pies, date muffins, elderberry jelly, cherry preserves, gingerbread pear cakes, pear crackers, dried ida reds, apple-topped granola bars, apricot pasta (well, in spirit), fresh fruit smoothies, peach loaves, apricot medley bars, a quince tart, and baskets upon baskets of fresh apples unabashedly boasting their freshness in the middle of the winter.
