Late-night picking
Oct 8th, 2008 by Laura Reinsborough

A week or two ago we held our very first late-night pick. The timing wasn’t all that different from other evening picks, but the spookiness grows as the days get shorter. We donned headlamps, flashlights, and spotlights to find our way under the thick canopy of this tall golden delicious apple tree.
Heather Ann paired her take-home supply with some publicly foraged crabapples for some beautiful homemade preserves.

It would be really great if you posted recipes to go with some of these yummy preserve pictures!
I agree with the previous responder: I too ,would love a recipe for crabapple preserves!
Okay, a recipe. :)
I made relish out of the crabapples, using the recipe found here: http://www.nsapples.com/recipes/intronew/rec_crabapplerelish.htm
Crabapple Relish
•2 lbs crabapples
•2/3 cup white vinegar
•2 1/3 cups white sugar
•1/4 tsp salt
•1/2 tsp ground cloves
•1 tsp cinnamon
Remove stem and blossom ends from crabapples. Quarter and core the crabapples and grind in a food grinder or processor. Heat vinegar and sugar in a large heavy pot. Add ground crabapples, salt, cloves and cinnamon. Stir. Simmer over low heat for 45 minutes, stirring frequently, until thick. Ladle into hot sterile jars and seal.
